I am in Thailand right now, and one of my favourite Thai foods is som tam. Som tam is a spicy salad. The ingredients in som tam vary, but the version which is most popular among foreigners is the papaya one. I think many foreigners know this salad just as “papaya salad”. Good som tam should have a red chili or two, some shallots or garlic, some palm sugar, fish sauce, lime juice, salt, shredded papaya, tomatoes, and toasted peanuts. I’ve also had som tam with shredded carrots added in and, as in this photo, some fresh green beans. It is also common to add in dried shrimps and even a whole mini black crab (next time I order som tam, I’ll try to get a photo of the black crab for this post).
